I recently bought an ice cream maker, so i knew exactly what kind of recipe i wanted for this months challenge, and i found it on All Recipes. So here is my “Lime” recipe for February 🙂
Coconut Lime Sorbet
- 1 400ml tin of creamed coconut
- 125ml fresh Lime Juice
- 175ml of water
- Combine all the ingredients in an ice cream maker and freeze according to manufacturers instructions.
I was a little sceptical about this, would it be sweet enough? So i added 3 tablespoons of caster sugar to the lime juice and heated it until the sugar dissolved first, before adding the creamed coconut and then pouring it into the ice cream maker. I’m glad i did 🙂
