One Ingredient – February

Laura over at the food blog, How To Cook Good Food issues her fellow bloggers with a monthly challenge. The “One Ingredient” Challenge asks bloggers to make (and blog about) a recipe that includes as its main ingredient the randomly selected food item for that month.

Limes

I recently bought an ice cream maker, so i knew exactly what kind of recipe i wanted for this months challenge, and i found it on All Recipes. So here is my “Lime” recipe for February 🙂

Coconut Lime Sorbet

  • 1 400ml tin of creamed coconut
  • 125ml fresh Lime Juice
  • 175ml of water
  1. Combine all the ingredients in an ice cream maker and freeze according to manufacturers instructions.

I was a little sceptical about this, would it be sweet enough? So i added 3 tablespoons of caster sugar to the lime juice and heated it until the sugar dissolved first, before adding the creamed coconut and then pouring it into the ice cream maker. I’m glad i did 🙂

  1. What a wonderful flavour, I am keen to try coconut cream in an ice cream as I have a machine too and imagine this is a flavour I could make regularly. My favourite flavour of sorbet is The River Cafe’s lemon sorbet recipe, so sharp. Thanks so much for entering One Ingredient!
